Observations

Color: Amber

Nose: A delightfully pronounced nose of red apple, black pepper, cinnamon, sweet caramel. After it sits a bit, tons of brown sugar comes out, with dark chocolate and graham cracker.

Palate: Starts off with a nice spicy oily mouthfeel. That fades to dark chocolate and oak.

Finish: Medium long with black pepper, dark caramel, chocolate covered raisins.


Overall

This reminds me of a dessert bread you’d eat around the holidays, like pumpkin bread or something similar because of the fantastic baking spices and caramel. This is especially true on the nose with some air, but holds true all the way through the finish.

The thing that makes this bourbon great is how it evolves. subsequent trips to the glass turn up new scents and flavors.

At $60 a bottle, it’s not cheap – but it’s better than many $60 bottles on the shelf in my opinion.
